Chef de Cuisine Tim Moreno Fuses Culture and Tradition Offering Approachable Latin Dishes
Cygnus27, Grand Rapids’ AAA Four-Diamond restaurant, has introduced a new Latin American-inspired menu offering an approachable dining experience for locals and visitors. Rising culinary star Chef de Cuisine Tim Moreno used inspiration from his heritage to create the new direction for the menu which highlights a wide variety of Latin flavors and dishes from Spain, Mexico and South America.
“The new menu showcases my passions and background with traditional and contemporary twists on Latin favorites,” said Chef de Cuisine Tim Moreno. “I’m proud to lead Cygnus27 in a new direction and elevate the culinary scene in downtown Grand Rapids.”
Located on the 27th floor of the historic Amway Grand Plaza, diners seated among celestial murals will enjoy sweeping views of Grand Rapids from floor-to-ceiling windows alongside tapas-style sharable dishes like halibut ceviche, a traditional Central American dish consisting of fresh halibut, mint, carrots, jalapeno, pickled jicama, watermelon radish, citrus, and blood orange vinaigrette. Other menu highlights include chorizo croquettes, corn crusted calamari or manchego fritters. Entrée highlights include spice rubbed pork chops paired with scallion arepa, prickly pear coulis, peanut slaw and a tamarind reduction to create a flavor explosion.
Helping Chef Moreno bring the new Latin flavors to the community is new General Manager Manny Rivera.
“We have created a menu and ambiance unlike anything in Grand Rapids,” said Rivera. “This menu caters to those who want to experience something new with the same high-quality ingredients, flavors and service they have come to know and love from Cygnus27.”
The combination of Latin flavors and the sprawling views of Grand Rapids provide an ambiance unmatched in the region offering the ideal venue for family-style dinners or parties, events and celebrations in the restaurant’s two private dining rooms.
The dining room is open Tuesday – Saturday, 5:00 p.m. to 10:00 pm. Seasonal Sunday brunch is served 10:30 a.m. to 2:00 p.m. The Cygnus27 Lounge is open for cocktails Friday and Saturday from 5 p.m. to 1 p.m. Reservations are not required but encouraged.
